Seriously Sexy Butternut Soup

Ingredients

1 butternut squash (rough chopped into 2inch cubes)
1 white onion (rough chopped)
4 cloves garlic (rough chopped)
1 tsp turmeric
1 tsp ginger
1 lemon, juiced
1 tsp hot curry powder
1 tsp coconut oil
1 tsp chilli flakes
Salt & pepper
½ tin of coconut milk
1.5 pints chicken stock
1tbsp coconut flakes
Method

• In a large pan heat the coconut oil and chuck in the garlic cloves, onion and fry until golden, then chuck in all the butternut squash and let cook for 5 mins.
• Now add the curry, turmeric, chilli flakes, ginger, lemon, chicken stock, salt & pepper and place a lid on and cook at a simmer for 30 mins.
• When cooked and all the butternut squash is easy to mash up blend mix with a stick blender until thick smooth consistency.
• Now add coconut milk, stir and leave to stand.
• Now heat a frying pan and with no added oil heat to medium and add coconut flakes to pan, toast until coconut is mainly golden and add to top, alternatively you can add chilli and a dash of olive oil.
